Inspiration:

Ingredients

  • 1   15 oz can   chickpeas   rinsed and drained
  • 1/2      red bell pepper
  • 1/2   medium   onion
  • 1   stalk   celery
  • 2-3   tbsp   low fat mayonnaise
  • 1   tbsp   fresh dill   (or 1/2 tbsp of dried dill)
  •       Salt and pepper   (to taste)
  • 1      tomato
  • 2   cups   your favorite greens   or baby spinach

 

 

Instructions

Dice Red bell pepper, onion and celery into small pieces and toss into bowl. Add drained chickpeas, dill and mayonnaise. Mix well and season with salt and pepper to taste.
