Our Favorite Beans (or Seeds) for Sprouting in the Classroom or at Home

Have you ever wondered how to grow your own beans or seeds? It’s a great option to having organic, fresh vegetables without the stress and hassle of purchasing overpriced store versions. Growing your own sprouts is an excellent project that the whole family (or classroom) can get excited about. Here are Healthy Little Cooks’ favorite sprouts to start out with:


Mung Beans

The mung bean is the seed of the vigna radiata plant. It is considered a legume, a plant that has seeds pods, such as the green pea.The mung bean has vitamins A, B, C, and E, as well as calcium, iron, magnesium, potassium, fiber, and protein. It is the most widely consumed sprout on the planet.


Alfalfa Sprouts

Coming from the alfalfa plant, alfalfa sprouts are the shoots (the new growth of stems, flowering stems, and leaves) which are harvested prior to maturing to its full growth potential. Due to its small size, the vitamins and minerals found in the alfalfa sprout are concentrated, meaning that you get a lot more health benefit for the amounts consumed. A special benefit in alfalfa sprouts is vitamin K. This nutrient is helpful in aiding our body in blood clotting, which is a necessary function when we become hurt or injured. Alfalfa sprouts are also loaded with vitamins A and C, calcium, potassium. Other nutrients found in these sprouts, in smaller doses, are magnesium, iron, and folate.



Lentils, along with the mung bean, is considered a legume. What makes lentils special is their health benefit in lowering cholesterol due to their high fiber content, which also helps to prevent blood sugar levels from rapidly rising after eating. Along with fiber, lentils are also high in iron, folate, vitamin B, and protein.


Sunflower Seeds

Sunflower seeds are the edible seeds found inside the hardened, dehulled shell (or husk) from the sunflower plant. Sunflower seeds are rich in selenium, a cancer-fighting element, as well as magnesium, copper, vitamin E, and antioxidants. Sunflower seeds have also been known to lower cholesterol.
