Inspiration:
Ingredients
- 1/4 Cup black beans drained and rinsed
- 1 tbsp red chunky salsa
- 8-10 leaves Baby spinach about a small handful
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp turmeric
- 1 pinch salt or to taste
- 1 handful tortilla chips per person
Instructions
1. Place a hand full of tortilla chips on a plate and set aside.
2. Use a plastic knife to cut baby spinach into small pieces on a paper plate. Make cutting easy by moving the knife’s alligator teeth forward and backward over the spinach, versus pressing down. Then sprinkle spinach over tortilla chips.
3. Pour black beans, salsa, cumin, garlic powder, turmeric and a pinch of salt in a bowl and mix with a plastic spoon.
4. Gently pour black bean mixture over tortilla chips and spinach.
5. Eat & enjoy!
