Easy, quick and healthy! This Curry Chicken Salad makes for a perfect on-the-go lunch for busy moms, picky eaters and healthy snackers. With a few simple ingredients (that you probably already have at home) and a 2 quick steps, anyone can make a delicious meal!

  • 8oz      canned or cubed cooked chicken breast
  • 2/3   cup   chopped apple   approx. 1 small apple
  • 1/2   cup   dried cranberries   or raisins (or combo of both)
  • 2/3   cup   chopped celery
  • 1 1/2   tsp   curry powder
  • 1/2   tsp   garlic powder
  • 1/2-3/4   cup   mayonnaise




In a large bowl, combine chicken breast, apple, cranberries, celery, curry powder and garlic powder.

Depending on taste, add 1/2 cup to 3/4 cup of mayonnaise.

Serve on bread or pita pockets with lettuce.
