Description
Warm up with this winter with a delicious bowl of Curry Sweet Potato Pea Soup! Don't be afraid to get a little exotic with curry; we promise you'll love it!

Ingredients
- 3 Sweet potatoes
- 2 Carrots
- 1 red onion
- 2 cups peas frozen or canned
- 2 cups broth vegetable, beef or chicken
- 4 cups water
- 2-3 cloves garlic diced, about 1 tablespoon
- 1 1/2 tbsp coconut oil or olive oil for sautéing onions
- 1 1/3 cup coconut milk
- 1 tbsp curry powder
- 1 tsp ground cumin
- t tsp salt to taste
Instructions
Peel and dice onions, sweet potatoes, and carrots.
In a large pot, add oil and sauté vegetables on medium high until onions are slightly tender.
Add garlic and spices and continue to cook and stir vegetables for 1 minute, being careful not to burn.
Immediately add coconut milk, water, broth and peas.
Bring to a boil and cook for 1 minute.
Reduce to simmer and cook uncovered for 30 minutes.
