Vegan Zucchinni Pizza Boats

  • 3   medium   Zucchini
  • 1   jar   Barilla Marinara Sauce
  • 1   clove   garlic
  • 1/2   tsp   salt
  • 1/2   cup   spinach
  • 1      Miyokos Vegan "Monzerella cheese"
  • 1      Follow your Heart Vegan shredded parm cheese
  • 3   tbsp   olive oil
  • 1   pinch   oregano
  • 1   medium   red pepper
  • 1   medium   Yellow pepper




Preheat oven to 400 degrees.
Cut each zucchini into halves through the length
Place on baking sheet lined with foil or parchment paper.
In a bowl, mix together 2 tablespoons of olive oil and minced garlic then brush lightly over tops of zucchini.
Sprinkle with salt to taste then spread 1-2Tbsp marinara sauce over each zucchini. Sprinkle chopped spinach onto sauce
Top with the vegan mozzarella cheese then with vegan parmesan cheese.
Bake for approximately 15-20 minutes
Remove from oven and sprinkle with chopped fresh oregano.
Serve with slice peppers
