Description
This is my favorite lunch box recipe taught by my grandmother and its very yummy and less spicy in nature.It becomes more delicious with curd/yogurt raitha and i simply love this food always.
Simple,tasty and healthy veggie pulav.[As said by saikrish karthikeyan]
Inspiration: New Creation
Ingredients
- 2 teaspoon olive oil
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon Fennal seeds
- 1 piece green chilly whole,don't slit or cut
- 1 small onion cut into small pieces
- 1/4+1/4+1/4 cup carrot/peas/corn cut carrot into small pieces
- 1 cup rice(basmati) soak for 15 minutes(optional)
- 1 cup water
- 1 cup coconut milk fresh coconut milk is preferred
- 1/2 teaspoon salt adjust to taste
- 1/2 teaspoon pepper powder freshly ground is preferred
- 1/4 cup coriander/mint used for both pulav and raitha
- 1/4 cup curd/yogurt freshly prepared
- 1/4 cup onion cut into pieces(optional)
- 1 pinch salt/chat/chilly powder to sprinlkle on raitha
- 1/2 teaspoon ginger/garlic paste freshly prepared preferred

Instructions
Vegetable pulav:
1.Heat a pan/pressure cooker on a cook top.
2 Add 1 teaspoon olive oil and once it becomes hot,
add the cumin/fennal seeds and let it crack.
3.Then add green chilly along with mint and coriander leaves.
4.After 2 minutes add onion and let it become translucent.
5.Then add the ginger/garlic paste and saute for 2-3 minutes.
6.Add all the vegetables and saute for few minutes.
7.Now add the water+coconut milk and let it get hot to a boiling stage.
8.Now add the soaked rice removing the excess water.give a stir.
9.Close the lid after adding salt/pepper powder and the remaining 1 teaspoon oil.
10.Cook in a slow flame for approximately 15-20 minutes.
11.After 20 minutes open the lid and give a complete stir gently.
Hot and tasty pulav is ready to serve.
Raitha:
1. In a bowl add the onions and salt to taste.
2. Mix it well then add the curd/yogurt.
3. sprinkle a pinch of chat/chilly powder on top.
4. Add coriander and mint leaves(Optional)
